Grilling: Mediterranean Chicken with Navy Bean Salad [VIDEO]

TRP-Grilling-Chicken-SSThis video shows you how to BBQ chicken in less than 12 minutes. Add the navy bean salad as part of the cooking process or serve cold on the side. Step-by-step instructions include how to roast peppers and cutting basil into ribbons for a great presentation.

Ingredients:

  • Coconut oil
  • 4 cups of cooked navy beans or 2 cans navy beans, rinsed and drained
  • 1 lb tomatoes, chopped
  • ½ cup basil, chopped + about 15 leaves for garnish
  • 10 oz feta cheese, crumbled
  • 1 lb zucchini, cut into ¼ inch slices
  • 3-4 roasted red pepper or 2 jars roasted red peppers, drained
  • 4 4 oz. boneless chicken breasts

Directions:

  1. Heat grill.  Fold four 18 inch long pieces of foil in half; unfold and using a paper towel wipe the inside of the foil with coconut oil.
  2. Mix together beans, tomatoes, chopped basil, ½ of feta in a bowl.
  3. Place ¼ cup of the mixture in the center of each piece of foil.  Top with ¼ of the zucchini slices, ¼ of red peppers, and ¼ of the remaining feta.
  4. Place chicken breasts to side of mixture.
  5. Fold foil to close and crimp to seal.  Place on grill, close lid, and cook until packets are puffed / about 12 minutes.
  6. Carefully cut foil to open.  Can be served in foil packet.

Foods serve many purposes in your life. They provide you with nourishment and they simply taste good. They can also heal your body. The choices you make in your diet can help to prevent certain diseases, heal specific conditions, and cut your risks of severe illness dramatically. There are numerous different healing foods you need to add to your diet so that you can lead a healthier lifestyle. The more you alter what you eat and what you avoid, the better your chances of having a long life.

Healthing Foods – Tomatoes

We have always known that tomatoes are extremely healthful, but new studies have backed this up as well. A group of scientists in Finland just affirmed that a diet with a heavy tomato content will actually reduce the risk of stroke by nearly half. That is because tomatoes include something called oflycopene. This is actually a color pigment that is responsible for the red in the fruit. This pigment has a dramatic impact on your chances of having a stroke later in life.

There are numerous tomato based diets you could add to your meal plans, such as spaghetti, frittatas, soups, salads, and pastas. If you want to develop a diet with a high tomato content, one option is to look for Mediterranean recipes. These diets are heavily based on tomatoes along with other healthful foods like olives and vegetables.

Healing Foods – Raisins

Studies have shown that grapes and raisings include polyphenols. These ingredients actually have proven to lower blood pressure and provide better cardiovascular health. You can get this same health benefit from any grape or derivative, but there is a higher concentration of polyphenols in raisins specifically. You can add them to your diet in a few different ways. Of course, you can eat raisins as a healthy snack. Additionally, you can add them to salads and baked meals.

Healing Foods – Yogurt

You have most likely seen commercials indicating the healing power of yogurt, and this is actually completely true. The bacteria in the food are extremely beneficial for digestive health. People who consume yogurt on a daily basis can find relief from painful gas, constipation, bloating, and other digestive upset. You do not have to choose yogurt that is advertised to provide better digestive health. Any type of the food will provide the same benefits.

Healing Foods – Apricots

Kidney stones are common problems that plague many people every year. The kidney stones are most common in women in their twenties, but anyone can develop them. While there is no clear reason why the stones form, there are things you can do to help prevent them. Apricots help to prevent kidney stones by not allowing calcium minerals to build up in the kidneys. Apricots are so helpful for this purpose that they have been endorsed by the American Dietetic Association.

Healing Foods – Tuna or Mackerel

Both of these types of fish are very high in omega-3 fatty acids. These acids do a number of different things from your health, including reducing your risk of heart disease. You may have already heard of the heart benefits of the acids, but you may not know that they are also mood stabilizers. Consuming fish can help to ease the feelings of anxiety, depression, and stress. The American Psychiatric Association even condones the use of fish in order to treat depression in patients.

So many foods have healing powers. When you choose to change your diet, you can often avoid taking medications, which can have unwanted side effects. If you choose healing foods and add them to your diet regularly, you will find that they can make you a much healthier person. This will allow you to live a longer, happier life as well.

Creamy Tomato Dip

Creamy and tangy this tomato dip can be used with fresh vegetables or thinned and made into a fantastic dressing for mixed greens.

Ingredients:

  • 6 Tbs cottage cheese
  • ¼ cup sun-dried tomatoes in olive oil, drained
  • ¼ cup cream cheese
  • 1 tsp fresh lemon juice
  • Dash of garlic powder
  • Dash of hot sauce (optional)
  • 2-4 Tbs buttermilk

Directions:

  1. Combine everything except buttermilk in a food processor.  Pulse until mixture is slightly textured.
  2. Add buttermilk and pulse until desired thinness.

Tuna Stuffed Tomato – Dairy Free

Tuna Salad Recipe:

This tuna “salad” mixture can be placed on top of mixed greens or stuffed in a wrap if you eat grains.  Add a bit of red pepper for more crunch.

Ingredients:

  • 1 can tuna
  • ¼ cup celery, minced
  • 2 Tbs red onion, minced
  • 1 Tbs capers, with juice
  • 1 Tbs Dijon mustard
  • 1 oz fresh dill, chopped or ¼ tsp dried dill
  • ¼ tsp celery salt (optional)
  • 1 large tomato

Directions for Tuna Stuffed Tomato:

  1. Mince      onion and allow to sit for 5 minutes.
  2. Slice tomato in half, remove seeds and pulp.
  3. Mix      all ingredients (except tomato) in a bowl.
  4. Stuff      tuna mixture into tomato.
  5. Can      be served over a bed of mixed greens if desired.

Healthy Snacks – Tuna Stuffed Tomatoes [VIDEO]

  • 1 can tuna
