Sweet and spicy is always one of my favorites, so I had to find a way to indulge and remain healthy. This quick salad uses the bounty of fresh fruits and vegetables available by pairing spinach and watermelon with a spicy dressing and salty turkey bacon. Mmmmmm, mmmmmm good!
Spinach Watermelon Salad
You can add additional protein to this salad or serve it as a side salad even. The watermelon and chili gives it a sweet/spicy taste that goes with almost any food.
You can use full leaf spinach in place of baby spinach. In order to get the most nutrient absorption I would recommend warming the dressing just a bit. This will allow for a better breakdown of the cellulose and hemicellulose fibers, making it easier to digest. Warm the dressing and toss everything together.
Spinach Watermelon Salad Ingredients:
- 2 Tbs. chili paste
- 2 Tbs. fresh lime juice
- 1 Tbs. extra virgin olive oil
- 5 oz. baby spinach
- 2 cups cubed watermelon
- 3 slices turkey bacon
- 2 Tbs. chopped red onion
Spinach Watermelon Salad Directions:
- Whisk together chili paste, lime juice, and oil in a large bowl.
- Cook, cool, and crumble or chop turkey bacon strips. Add to bowl.
- Add remaining ingredients to bowl. Toss to combine. Serve.
