I remember the day I found out that it was in the best interest of my health to minimize grains. It had only been a year or so since I had found out I needed to give up dairy! What was the point of being here if I couldn’t enjoy the simplest of foods? (Okay, that’s a bit exaggerated – but you get in a weird mindset when you find out you can’t have something).
Overall, I didn’t really mind the restrictions – except for spaghetti. I missed spaghetti. I tried brown rice pasta. I tried quinoa pasta. They’re good. But I really missed the taste and texture of whole wheat pasta with a rich, meaty spaghetti sauce.
Spaghetti Sauce and Jovial
Then I was introduced to Jovial Foods which uses a non hybridized, ancient wheat, called Einkorn. It is high in thiamin which can be difficult to find in sources. It’s a good source of protein dietary fiber and a number of B Vitamins. It contains a significant amount of the powerful antioxidant Lutein (good by free radicals), has a higher Oxygen Radical Absorbance Capacity (ORAC) than durum and bread wheat, a higher content of proteins, tocols and carotenoids than other species of wheat, and a lower percentage of nutrient loss during processing. And it tastes great topped with spaghetti sauce!
Here’s the most interesting part – my body likes this wheat. Now, know I don’t have celiac or other gluten issues. I just don’t really tolerate most common grains very well. I tried to make my own pasta, but truthfully, not my best effort. But, I’ve adapted by eating the more ancient grains and seeds. Jovial’s dried pastas were the solution! And spaghetti came back into my life.

Spaghetti Sauce Recipe
Back to the recipe. I love coming home to the smell of spaghetti sauce cooking on the stove or in the slow cooker. It feels homey and reassuring. Plus, I know I’m going to eat one of my all-time favorite foods. So, here is the spaghetti sauce recipe that we use most often. Of course I highly recommending putting this spaghetti sauce recipe over some Jovial spiral pasta. But, if you can’t tolerate wheat, spoon it over spaghetti squash, zucchini noodles, or cooked leafy greens.
Spaghetti Sauce Ingredients:
- ½ medium onion
- 2 cloves garlic
- 2 Tbs. coconut oil
- 2-3 small carrots
- 2-3 small zucchini
- 1 red pepper
- 2 cups mushrooms
- 1 lb. grass-fed ground beef
- 1 lb. grass-fed Italian sausage
- 28 oz. crushed tomatoes
- 28 oz. whole tomatoes
- 2 Tbs. dried oregano
- 1 Tbs. dried basil
- 1 Tbs. garlic pepper
- ½ Tbs. cumin
Spaghetti Sauce Directions:
- Chop onions and press garlic. Allow to set for 5-10 minutes.
- Chop carrots, zucchini, and pepper in ¾ inch pieces. Slice mushrooms.
- In a stock pot sauté vegetables in coconut oil until tender.
- Remove vegetables and set aside. Brown beef and sausage on medium-low heat until there is just a little pink left.
- Add sautéed vegetables back into pot. Add all remaining ingredients and stir.
- Bring mixture to a boil and simmer for at least 30 minutes or place in a slow cooker on low for 4-6 hours.
