This is it – the last new salad dressing to keep you excited about eating fresh vegetables this Spring. This salad dressing came at the request of a client who was going to have a very special brunch for female friends. She wanted something light and airy but with good taste and texture. Ultimately I designed this salad and salad dressing for her – it was a huge hit!
Salad Before the Salad Dressing
Although I think this salad dressing would do great on any light salad here’s what I used in this picture – organic mixed greens, cucumbers, the other half of the pear, shaved carrots, goat cheese, and Celestial Cina-Pecan nuts from Living Nutz.
Pear Vinaigrette Salad Dressing
Salad Dressing Ingredients:
- ½ pear, chopped
- ¼ cup white grape juice
- ½ garlic clove, pressed
- 1 tsp Dijon mustard
- 2 T white wine vinegar
- ½ tsp white pepper
- 1/8 tsp sea salt
- ¼ cup flaxseed oil or extra virgin olive oil
Salad Dressing Directions:
- Mix all ingredients except oil in a blender. Blend for one minute on high-speed until well combined. Drizzle oil into blender until dressing becomes creamy.
