Easy Healthy Meals
I’ve written about my love of using the slow cooker for easy healthy meals. (Search my site for a number of recipes and how-to videos). These are basically make ahead meals and pot roast is a simple one. But, I don’t feel like the flavor is as robust in the slow cooker. Yes, I’ve tried searing the pot roast and extra seasonings. It is still easy healthy meals but not quite as flavorful as the pot roast I remember my mother making. Unfortunately, I’m not home all day to prepare pot roast; I truly need make ahead meals.
Make Ahead Meals
I recently spent a little time reading about my oven. If you’re anything like me, this has never occurred to you before. My oven is amazing! Yours might be too.
My favorite feature (currently) is time bake. This is where you put the food in the oven, set the time, temperature, and duration of cooking, and when you want the food done. So simple for make ahead meals that are easy healthy meals!
I tried a couple different ways to make the pot roast and for the extra time and energy of searing the meat, my family didn’t notice. I added beets and potatoes one pot roast too. We liked the potatoes but not the beets (too mushy, not enough flavor, and added pink color to the other vegetables).
It took me less than 5 minutes to prep everything, stick in the oven, and magically pot roast and vegetables was ready when we got home. Plus the house smelled inviting.
One of the areas of concern when trying make ahead meals is to keep foods in proper temperature range for safety. After a few calls to ServeSafe folks and a bit of research, I feel this easy pot roast recipe is clear of danger. Any bacteria will be killed during the cooking process since this cooks to very well done. I like to call it fall-apart tender. Plus, pot roast is a full slab, rather than ground, so any potential bacteria should be only on the outside which will get plenty cooked.
Easy Healthy Meals – Pot Roast Worth the Try
My family has asked that this make ahead meals be added to our regular rotation. I agree as we had plenty of leftovers for lunches and even another night of enchiladas. Easy Pot Roast Ingredients:
- 3-5 pound chuck roast
- Sea salt
- Fresh ground black pepper
- 2 onions
- 6-8 carrots
- 2-3 small red potatoes
- 5-8 cloves of garlic
- 2-3 sprigs fresh rosemary or 1 tsp dried
- 2-3 sprig fresh thyme or 1 tsp dried
- Preheat oven to 275 degrees.
- Peel and cut onions in quarters. Cut carrots into approximately 2 inch pieces. Quarter red potatoes. Peel garlic.
- Generously salt and pepper roast.
- Place roast in roasting pan.
- Place vegetables around roast.
- Place herb sprigs on top of roast or sprinkle dried herbs.
- Cover and roast for 3-4 hours depending on weight. Roast is done when it’s fall-apart tender.
