- 1 medium beet, peeled and grated
- ½ Tbs Dijon mustard
- ½ Tbs fresh lemon juice
- 1 Tbs extra virgin olive oil
- Sea salt
- Fresh ground pepper
- Fresh mixed greens
- Peel and grate beet.
- Whisk together mustard, lemon juice and oil. Add salt and pepper to taste.
