- 1 clove garlic
- 1 15 oz can black beans or
- 2 cups dried black beans, soaked & cooked
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons tahini
- 3/4 tsp ground cumin
- 1/2 tsp sea salt
- 1/4 tsp cayenne pepper
- juice from one lime
- 1/4 tsp paprika (optional)
- 10 kalamata olives (optional)
Directions
- Drain and reserve liquid from black beans. Rinse black beans.
- Mince garlic in food processor.
- Add black beans, 2 Tbs reserved liquid, and remaining ingredients except paprika. Process until smooth, scraping down the sides as needed.
- Add additional seasonings and liquid to taste.
- Garnish with paprika if desired.
